Shrimp Pasta With Sundried Tomatoes

This meal is one that I really enjoy cooking and eating. It is sweet, savory and just delicious. This is a meal that I prepare when want something different and not that expensive. Please enjoy!

Ingredients

  • 1 lb. shrimp (uncooked or cooked)
  • 8.5 oz. sun-dried tomatoes with olive oil
  • 1 lb. spaghetti noodles
  • 3 C. parmesan cheese (fresh or bottled)
  • dashes of paprika, crushed red pepper or hot sauce (optional)

Directions

Put your pasta in a pot of boiling water and let cook.  Heat up a large skillet on medium high. Pour the olive oil off of the sundried tomatoes into the pan (but not all of it). Let olive oil get hot. Pour shrimp in skillet with olive oil and cook until done. Remove shrimp and set aside in a bowl. Sautee' sundried tomatoes until they have a slight curl to them. Pour the rest of the olive oil onto the tomatoes. Add shrimp and stir until hot. Drain pasta. Add shrimp and sauteed' sundried tomatoes together.  Mix with a big fork and make sure that all ingredients are mixed evenly throughout the dish. Sprinkle with parmesan cheese over the top of the pasta dish.
