Shrimp Pilaf

Ingredients
- 2 lbs. shrimp
- 1 onion, chopped
- 1 1/2 C. long-grain rice
- 1 C. water
- 1/4 tsp. pepper
- 1/3 C. olive oil
- 1 C. tomato sauce
- 1 tsp. salt
Directions
Cook onion in olive oil until soft. Add shrimp, and cook 2 minutes. Cover with tomato sauce, seasonings and 1 C. water. Bring to boiling point. Reduce heat and simmer 5 minutes. Measure liquid, and add enough water to make 3 C. Bring to a boil, and add rice. Cover and cook slowly until rice is tender and all liquid is absorbed.
