Shrimp Rolls

Ingredients
- 1/2 lb. salad shrimp, rinsed and drained
- 1/2 C. celery, finely chopped
- 1 Tbs. fresh tarragon, minced
- 1 tsp. Dijon mustard
- 1/2 C. light mayonnaise
- 1 pinch salt
- 1 pinch pepper
- 4 Orowheat Sandwich Thins
- leaf lettuce, washed and trimmed, but left whole
Directions
Combine shrimp, celery, tarragon, Dijon mustard, mayonnaise and salt and pepper in a bowl. Chill for 30 minutes. Toast sandwich thins under the broiler until lightly browned. Top each sandwich thin with 1/4 shrimp mixture and lettuce leaves.
