I found this recipe earlier and am going to most definitely try it for my dinner tonight.

Ingredients

  • 1 lb. small shrimp, cooked, shelled, and cooled
  • 4 hard boiled eggs, chopped
  • 1 C. chopped celery
  • 1/4 C. chopped green onion
  • Mayonnaise
  • 1 Tbs. lemon juice
  • 1 can (3 oz.) chow mein noodles
  • Avocado slices for garnish

Directions

Combine the shrimp, eggs, celery, green onion, and just enough mayonnaise to bind the mixture together. Add the lemon juice and carefully fold in the chow mein noodles. Garnish with avocado slices.
