Shrimp Salad

Shrimp is served with rice, peas, celery, and onion with a light soy sauce and oil dressing.

Ingredients

  • 1 C. long grain rice, cooked and cooled
  • 1 small pkg. frozen green peas, cooked and cooled
  • 2 tins shrimp
  • 1 1/4 C. celery, diced
  • 1/4 C. green onion, diced
  • Sauce:
  • 1/2 C. salad oil or olive oil
  • 1 Tbs. soy sauce
  • 3 Tbs. vinegar, white
  • 1/2 tsp. Accent
  • 1/2 tsp. celery seeds
  • 1/2 tsp. sugar
  • 1 tsp. salt
  • Addition:
  • 1/4 C. toasted almonds

Directions

Mix the shrimp and vegetables together. Make the sauce and pour over the shrimp and vegetables; mix well. Add toasted almonds 1 hour before serving.
