Shrimp scampi with linguini pasta is a wonderful and light dinner to prepare this summer. It’s simple yet sophisticated.

  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 3 garlic cloves
  • 1 pound linguini
  • ½ cup dry white wine
  • 3 tablespoons fresh lemon juice

Boil a large pot of water and add the pasta. Cook for 8 minutes and drain the noodles. Melt half of the butter and oil over medium-high heat in a big skillet and sauté the garlic for 2-3 minutes. Season the shrimp with salt and pepper before adding them to the pan. Cook for 3 minutes and remove the shrimp from the heat. Pour in the lemon juice and wine to the skillet. Add the remaining butter and oil and once the butter is melted add the shrimp back to the pan with the pasta. Stir well and drizzle with additional olive oil over the pasta before serving.
