  • 8 oz. linguine
  • 3 Tbs. olive oil, divided
  • 1 lb. large shrimp, peeled
  • 6 Tbs. unsalted butter
  • 6 garlic cloves, minced
  • 1/4 tsp. red pepper flakes
  • 1/4 C. coarsely chopped fresh parsley
  • 1 tsp. lemon zest
  • 1 Tbs. fresh lemon juice
  • 1/2 tsp. salt

Boil the pasta in salted water according to the package directions. Drain and set aside. Heat 1 tablespoon of oil in a large skillet over medium high. Add half the shrimp and cook about 1 minute on each side until opaque. Remove the shrimp and repeat with another tablespoon of oil and the rest of the shrimp. Melt butter in the same skillet and add the remaining oil, garlic, and red pepper flakes. Sauté until the garlic starts to brown. Stir in the cooked shrimp, parsley, lemon zest, lemon juice, and salt. Cook another minute until warmed. Add the pasta and cook 1 more minute until well tossed and hot.
