Shrimp scampi is a date night classic. It’s easy to make and flavorful to boot due to the complimentary flavors of lemon and parsley.

  • ½ pound of shrimp, unshelled and deveined
  • 1 package of spaghetti noodles
  • 1 cup of fresh grated Parmesan
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 tablespoon of fresh parsley, chopped
  • 1 teaspoon of red pepper flakes
  • Juice of one lemon
  • Pepper and salt, to taste

Cook the pasta to al dente as described on the package. In the meantime, heat the olive oil over medium-low heat before adding the garlic and butter. Sauté the garlic and butter for two minutes, or until fragrant. Then add the shrimp, parsley, red pepper flakes and lemon juice, let cook for five minutes. Once the shrimp have cooked, remove from heat and mix in the Parmesan. Serve with of the pasta and enjoy!
