This is a shrimp scampi recipe that I first made for my friend Emma Scappi. The recipe serves 2, so invite a friend over and enjoy the flavorful red pepper in this shrimp scampi.

  • 1 lb. med. size shrimp
  • 3 Tbs. olive oil
  • 2 Tbs. butter
  • 2 garlic cloves, minced
  • black and red pepper to taste
  • 1 1/2 tsp. chopped fresh parsley
  • 2 lemon wedges for garnish
  • 3 C. cooked brown rice

Preheat broiler. In shallow, flame-proof Corning Ware casserole dish, combine melted butter, oil, garlic, and pepper. Add shrimp and toss until coated. Spread shrimp in a single layer and broil for 3 to 4 minutes. Serve shrimp on top of brown rice, pour remaining butter sauce and drippings on top of rice. Sprinkle with parsley and red pepper. Finish the plate by garnishing with lemon wedges.

  • I have made this recipe for years. The only change I make from yours is that I serve it over rice vermicelli instead of rice, and exchange cilantro for your parsley. It is always a big hit!
