Shrimp Scappi Scampi

Ingredients
- 1 lb. med. size shrimp
- 3 Tbs. olive oil
- 2 Tbs. butter
- 2 garlic cloves, minced
- black and red pepper to taste
- 1 1/2 tsp. chopped fresh parsley
- 2 lemon wedges for garnish
- 3 C. cooked brown rice
Directions
Preheat broiler. In shallow, flame-proof Corning Ware casserole dish, combine melted butter, oil, garlic, and pepper. Add shrimp and toss until coated. Spread shrimp in a single layer and broil for 3 to 4 minutes. Serve shrimp on top of brown rice, pour remaining butter sauce and drippings on top of rice. Sprinkle with parsley and red pepper. Finish the plate by garnishing with lemon wedges.
