I love the combination of shrimp and avocado in this recipe!

  • 1 C. guacamole
  • 1/4 C. sliced green onion
  • 1 Tbs. lemon juice
  • 1/4 tsp. garlic salt
  • two 4 1/2-oz. cans shrimp, drained
  • 8 tostada shells
  • 3 C. shredded lettuce
  • 2 med. tomatoes, chopped
  • 1 C. shredded cheddar cheese

In a small bowl, combine guacamole, green onion, lemon juice, and garlic salt.  Stir in shrimp.  Warm tostada shells according to package directions.  To assemble tostadas, spoon some of shredded lettuce and chopped tomato onto each warm tostada shell.  Top each with some of the shrimp-avocado mixture.  Sprinkle with cheese.
