Shrimp Vodka Pasta

- 12 oz. penne pasta
- 2 Tbs. butter
- 1 1/2 C finely chopped onion
- 4 tsp. minced garlic
- 1/4 tsp. red pepper flakes
- 1 can crushed tomatoes
- 1/2 C green beans
- 1/4 C vodka
- 6 Tbs. heavy whipping cream
- 1 tsp. lemon zest
- 1 lb. raw shrimp, peeled, deveined
- 3 Tbs. chopped fresh parsley
- Parmesan cheese, as needed
Cook pasta according to package instructions.
Melt butter in a pot on medium high heat. Add the onion and sauté for 5 to 7 minutes, or until lightly browned. Add the garlic and red pepper flakes and cook for one more minute.
Add the crushed tomatoes and green beans to the onions. Stir in the vodka, cream and lemon zest. Bring to a simmer, then lower the heat.
After the sauce has simmered for 5 minutes, add the raw shrimp to the sauce. Cook for about 5 minutes, then remove from heat.
Add pasta to vodka tomato sauce and shrimp. Toss to coat.
Serve warm with Parmesan cheese on top.
