Shrimp with Tomatoes and Feta Cheese
Ingredients
- 2 lbs. med. shrimp
- 2-3 ripe tomatoes, finely diced
- 1 teacup olive oil
- 2 onions, finely diced
- 2 garlic cloves
- 7 oz. feta cheese
- 2 tsp. sugar
- 1 bay leaf
- salt
- pepper
Directions
In pot, sauté the onions in the olive oil. Add the diced tomatoes, the garlic, the bay lead, sugar, salt, pepper and an adequate amount of water. Cook the sauce for about 30 minutes. Drop the cleaned shrimp into the sauce and continue cooking for another 4 minutes. Remove from heat. Place both shrimp and sauce in a Pyrex dish. Spread thin slices of feta cheese over them and bake for 10 minutes. Serve immediately.
