  • 1 ½ C warm water
  • 1 ½ Tbs dry active yeast
  • 4 C all-purpose flour
  • 1 ½ tsp salt
  • 3 Tbs olive oil
  • 3-4 small tomatoes; sliced
  • ½ C shredder mozzarella cheese
  • Pepper

In a bowl, mix in the yeast and water. Let the mixture sit for about 5 minutes until yeast begins to bubble.

Meanwhile, in a separate bowl, add in 3 cups of flour and the salt. When the yeast is done, add in the yeast mixture and 1 Tbs of oil. Mix well together until a sticky dough is formed.

Using your hands, kneed the dough whiled adding the remaining flour a little at a time. Once all the flour has been added, the dough should come away from the sides of the bowl.

Take a separate bowl and coat it with 1 Tsp of oil, put the dough in, seal it with some cling wrap and let it rise for 30 minutes.

When the dough is almost ready, grease a 13’’ x 18’’ baking pan with some oil. Get the dough and plop it into the pan and begin to stretch it out towards the edges of the pan. Its okay if it does not reach the edges yet.

When that is done, cling wrap the pan and let the dough expand again for 2 hours.

Preheat the oven to 500 F. When the dough is ready, remove and stretch the dough a little more so it reaches the corners of the pan.

Top the dough with the cheese and then arrange the sliced tomatoes on top of it. Sprinkle with some pepper and bake for 20 minutes or until bread browns and cheese melts.

Remove and let it cool for 5 minutes before serving.
