  • 2 C. heavy cream
  • 1/2 C. + 1/2 tsp. honey
  • 1 Tbs. vanilla sugar
  • 4 egg yolks
  • 2 tsp. vanilla extract
  • 1/4 C. creme fraiche

In a 1 qt. pan, heat up cream, 1 tsp. vanilla extract and 1/2 cup honey. While cream is heating, take egg yolks and whip them until a pale yellow color. After steeping the cream slowly, add a little of the cream mixture to the eggs and beat mixture until smooth. Add the remaining cream mixture and beat until completely blended. Pour into custard pan through a hand strainer. Pour boiling water into pan to create a water bath. Bake for 45 to 55 minutes or until set. While cooling, combine creme fraiche and honey. Scape and add to creme fraiche. Mix 1 tsp. vanilla extract and sprinkle 1 tablespoon of vanilla sugar over cooled creme brulee, then place under broiler until caramelized. Top with creme fraiche mixture.
