  • ¼ C. confectioners sugar
  • ¼ C. cocoa powder
  • ½ C. heavy cream
  • ½ C. pecans, chopped
  • 1/8 tsp. ground cardamom
  • 8 oz. semisweet chocolate, chopped

In a saucepan, whisk the heavy cream and ground cardamom. Let it simmer fro 10-15 minutes. Heat up the semisweet chocolate in the microwave till melted. Combine mixtures. Pour the mixture into a baking pan. Place the baking pan into the freezer for 15-20 minutes. Scrape the chocolate for the baking pan into 1-inch balls. Place them onto a parchment lined baking sheet. Place them into the freezer for 10 minutes. Meanwhile, place the confectioners sugar, cocoa powder and chopped pecans into separate bowls. Remove the truffles from the freezer and coat them in that order.
