  • 28 oz. can plum tomatoes, crushed
  • 10 fresh plum tomatoes
  • 1 Tbs. olive oil
  • 1 onion, diced
  • 4 garlic cloves, chopped
  • Chili flakes
  • ¼ C. white wine
  • ½ tsp. oregano
  • Salt
  • Black Pepper
  • 1 lb. shrimp, peeled and deveined
  • ¼ C. parsley
  • ¼ C. basil
  • 1 lb. linguine noodles

In a large pan, heat the oil over a medium-high heat. Add the onions and sauté until tender, about 5-7 minutes. Add the garlic and chili pepper flakes, to taste, and sauté until fragrant, about 1 minute. Add the white wine to pan and simmer for 5 minutes. Add the canned tomatoes and oregano and simmer until sauce starts to thicken, about 15 minutes. While tomatoes simmer, begin to cook noodles. In a large pot with water, add a pinch of water and boil over a high heat. Once boiled, add in noodles and cook until tender. Drain and place noodles back into pot and place off to the side. Season tomato sauce with salt and pepper to taste. Add the shrimp to tomato sauce and simmer until cooked, about 2-3 minutes on each side. Remove tomato sauce from heat and mix in parsley and basil. Toss tomato sauce over noodles and mix. Serve on a plate or a bowl with extra sliced of fresh plum tomatoes and basil leaves for garnish.
