  • For the Cake
  • 1 1/2 C. sugar
  • 1/2 C. margarine
  • 2 eggs
  • 1 Tbs. vanilla extract
  • 1 1/2 C. all-purpose flour
  • 1/2 tsp. salt
  • 1 3/4 tsp. baking powder
  • 3/4 C. milk
  • For the Frosting
  • 3 C. confectioner's sugar
  • 1 C. butter
  • 1 tsp. vanilla extract
  • 1 Tbs. whipping cream
  • 1 C.Raspberries
  • 1/2 C. Blueberries

To make the cake:
Preheat the oven to 350 degrees. Combine the flour, salt and baking powder and set aside.
Beat the sugar and margarine until creamy. Beat in the eggs and vanilla. Add the dry ingredients, then the vanilla milk. Mix until the batter is smooth.
Fill a pan with batter. Bake 35-40 minutes or until a toothpick inserted in the center comes out clean and the top is golden. Let cake cool for 30 minutes before frosting.

To make the frosting:
In an electric mixer combine the butter and the sugar. Beat slow until mixed and then on a high speed for 2-3 minutes. Add the vanilla and cream for a minute more or until the right texture. Spread on to cake when cool and decorate with berries to form a flag pattern.
