  • 2 T. butter
  • 1 onion, finely chopped
  • 1 T. all-purpose flour
  • 2 (28 oz. ) cans diced tomatoes with juice
  • 1 C. reduced-sodium vegetable broth
  • 1/2 C. water
  • 3/4 C. heavy cream, warmed
  • 1/4 tsp. crushed red pepper flakes
  • sea salt
  • freshly ground black pepper

Use a medium skillet to melt the butter over medium-high heat. Add the onion and cook and stir consistently for around five minutes, which is about how long it should take to soften. Add the flour and cook and stir for one minute. When finished, put the onion-flour mixture into your crockpot. Stir the diced tomatoes and juice, vegetable broth, and water into your crockpot. Cover and cook on low for five hours, which is how long it should take for the tomatoes to soften.
