Simple And Delicious Clams Casino

- 15 medium-sized littleneck clams, shucked, keeping the bottom shells
- ⅓ C white wine
- 2 oz finely chopped pancetta
- ⅓ c chopped shallots
- 2 cloves of minced garlic
- Lemon, for garnish
- Salt and pepper to taste
- 2 T olive oil
First, preheat the oven to 500 degrees and line a baking sheet with aluminum foil. Heat oil over medium heat in a large skillet and saute the pancetta for about three minutes until it’s crispy. Next, add shallots, oregano, and garlic and cook for about five minutes until shallots are soft and translucent. Add wine and cook for about three minutes until it’s reduced. Remove skillet from heat and season with salt and pepper.
Place the clams on the lined baking sheet and add the filling to the shells. Bake clams for about 10 minutes. Remove clams from oven after baking, garnish with lemon, and serve.
