Simply Asparagus and Linguini

Juicy stalks of asparagus have been sautéed and mixed into a warm bed of linguini pasta. Grated parmesan gives a cheesy garnish to this easy-to-make meal.

Ingredients

  • 2 Tbs. Butter
  • 1/4 C. Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 8 oz. Fresh Asparagus, trimmed, peeled, and sliced
  • 2 tsp. White Wine Vinegar
  • 2 tsp. Lemon Juice
  • 5 oz. Linguini, cooked and drained
  • 1/4 C. Grated Parmesan Cheese

Directions

Melt the butter in a medium-sized skillet over medium heat. Add onions and garlic, and sauté until tender. Add the asparagus and continue to sauté for 2 minutes. Pour in the white wine vinegar and lemon juice, and cook for 1 minute, stirring continuously. Remove asparagus mixture from heat and pour into a large bowl. Add linguini to bowl, and toss to mix. Sprinkle with parmesan cheese before serving.
