This dish is simple to make and perfect for a potluck or tailgate! Spice this recipe for pulled chicken by adding diced jalapeno peppers and add color by adding peppers and onions.

  • 3-4 lb. boneless, skinless chicken thighs
  • 2 Tbs. oil
  • 3 C. ketchup
  • 3/4 C. brown sugar
  • 1/3 C. Worcestershire sauce
  • 3 Tbs. cider vinegar
  • 3 Tbs. honey
  • 3 Tbs. yellow mustard
  • 2-3 Tbs. molasses
  • 1 Tbs. ground mustard
  • 3 Tbs. garlic powder
  • 3 Tbs. onion powder
  • 1 tsp. ground red pepper
  • 2 tsp. garlic, minced
  • pinch of celery seed
  • salt and pepper, to taste

Lightly season the chicken with salt and pepper. Saute the thighs in a skillet with oil for 3 to 4 minutes on each side, just browning them on each side. While the chicken is cooking, combine the rest of the ingredients in a crockpot and stir to mix completely. Once the chicken is browned, drain the chicken and start putting the pieces into the crockpot. Mix the chicken into the sauce, pushing it down into sauce. Cover and cook on high for 1 hour. Reduce the heat to low and cook for an additional 5 to 6 more hours.

Remove the chicken from the crockpot and shred with two forks.Return the chicken to the crockpot and stir it into the sauce. Taste and add in more spices to taste. Cover and continue to cook until ready to serve.
