These beef burritos are easy to make and delicious to eat! Top them with your favorite toppings, like guacamole, sour cream, tomatoes, and olives for a tasty Mexican dinner!

  • 2 1/2 lb. beef top round steak, cubed
  • 2 Tbs. oil
  • 2 large onions, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz.) can enchilada sauce
  • 1 (14 1/2 oz.) diced tomatoes, undrained
  • 1-2 (4 oz.) cans chopped green chilies
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbs. flour
  • 1/4 C. cold water
  • 8 flour tortillas
  • diced tomatoes, optional
  • sliced olives, optional
  • cheddar cheese, optional
  • sour cream, optional

In a large skillet, brown the meat in oil and drain. Add in the onions and garlic. Saute for 2 minutes. Add in the enchilada sauce, tomatoes, chilies, salt and pepper. Bring this mixture to a boil, reduce the heat, cover, and simmer for 2 hours, or until the meat is tender.

Mix together the flour and water and add to the beef mixture, stirring constantly. Bring to a boil and cook. Stir for 1 minute, or until thickened.

Warm the tortillas and spoon 1/2 C. beef filling, off center, on each one. Fold the sides and bottom of tortilla over the filling, then roll up. Spoon a little more of the filling over the top of burritos. Serve garnished with tomatoes, olives, cheese, sour cream, onions or guacamole.
