Simple Beef Stew

Ingredients
- 5 lbs boneless beef chuck; cut into cubes
- 4 carrots; cut into chunks
- 2 potatoes; cut into chunks
- 3 Tbs olive oil
- 1 large onion; chopped
- 3 Tbs tomato paste
- 1/4 C balsamic vinegar
- 1 C beef stock
- 1/2 C beer
- 2 cloves garlic; chopped
- Salt
- Pepper
Directions
Heat the oil on high in a pot and begin browning the meat.
After the meat is evenly brown, add in the tomato paste, balsamic vinegar, beer, and beef stalk. Stir until the ingredients are well mixed.
Cover the pot and let it simmer for 1 to 1 1/2 hours. About half way through, add in the carrots, potatoes, garlic, onions and a pinch of salt and pepper to taste and continue to simmer.
Finally, allow the stew to cool for about 2 minutes, then transfer it into a bowl and serve.
