  • ¼ C. parmesan cheese
  • 1 C. quinoa
  • 1 C. mushrooms, chopped
  • 2 ½ C. vegetable broth
  • 3 C. butternut squash, cubed
  • 2 T. coconut oil, melted
  • ½ tsp. cinnamon
  • ½ tsp. paprika
  • Salt
  • Pepper

Preheat the oven to 400 degrees. Mix together the melted coconut oil, cinnamon, paprika, chopped mushrooms and cubed butternut squash. Place mixture into a saucepan and let it simmer over medium heat. Add in the quinoa and vegetable broth. Remove from heat once the quinoa is cooked. Sprinkle the parmesan cheese over the top. Salt and pepper to taste. Place the saucepan mixture into oven for 20 minutes. Let cool and serve. Enjoy!
