Simple Chicken and Asparagus Stir-Fry

- 1 Tbs. Lemon Juice
- 1 Tbs. Honey
- 2 Boneless Skinless Chicken Breasts, diced
- 1 Tbsp. Olive Oil
- 1 bunch Asparagus, trimmed and sliced
- 4 Garlic Cloves, thinly sliced
- 2 Green Onions, white and light green parts only, chopped
In a small bowl, combine lemon juice and honey. Add chicken to bowl, and stir to coat. Refrigerate until ready to use.
Warm olive oil in a large skillet over medium-high heat. Add asparagus, and sauté until tender. Remove asparagus with a slotted spoon and set aside.
Place chicken coated in marinade into skillet, reserving the marinade still in the bowl. Sauté chicken until almost cooked, but still a bit pink in the center. Add garlic, green onions, and reserved marinade to skillet. Continue sautéing for 2 minutes until the chicken is fully cooked through. Remove chicken from heat and stir in asparagus before serving.
