  • 2 boneless skinless chicken breasts, diced
  • 1/2 C. plain yogurt
  • 3 T. curry powder
  • 1/4 tsp. cinnamon
  • 3 T. butter
  • 1 medium yellow onion, chopped
  • 1 T. garlic, minced
  • 1 T. ginger root, minced
  • 1 tsp. salt
  • 1/4 C. chicken stock
  • 2 T. fresh cilantro, chopped
  • 3 T. raisins
  • 2 pkgs. Basmati ready rice
  • 1/3 C. slivered almonds

In a large bowl, add the chicken, yogurt, curry powder, and cinnamon. In a large skillet, melt the butter over medium heat. Add the onion and stir frequently until golden. Stir in garlic and ginger, cooking for another two minutes. Add the chicken and its marinade, stirring to combine. Season with salt, reduce heat, and cover. Cook for about seven minutes, making sure to stir occasionally. Gently stir in the rice, cilantro, and raisins. Cover with chicken stock, stir, and simmer for a few minutes. Season with salt to taste before serving immediately.
