  • Chicken:
  • 2 boneless skinless chicken breasts, cubed
  • 1 tsp. smoked paprika
  • 1/4 tsp. garlic salt
  • 1-2 Tbs. oil
  • Dressing:
  • 1 1/2 Tbs. red wine vinegar
  • 3 Tbs. oil
  • 1 tsp. Dijon mustard
  • 1/4 tsp. garlic salt
  • 1 tsp. honey
  • Salad:
  • 1/4 C. olives
  • 3 hard boiled eggs, chopped
  • 1/3 C. cherry tomatoes, chopped
  • 1/4 red onion, sliced thin
  • 1 head lettuce, chopped
  • 1 avocado, chopped

To make the chicken, heat the oil in a saucepan over medium heat. Toss the cubed chicken in a bowl with the smoked paprika and garlic salt. Saute the chicken in the oil until cooked through, about 6 to 7 minutes. Cool slightly before adding to the salad. To make the dressing, combine all the ingredients in a bowl and whisk well. Set aside. Toss all the ingredients for the salad, the chicken and 2 to 3 Tbs. dressing. Serve immediately.
