Simple Chocolate Covered Caramels

- 1/2 cup butter
- 1 cup and 2 tablespoons brown sugar
- 1/2 cup light corn syrup
- 1/2 (14 ounce) can sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 1/2 pound milk chocolate
- 1-1/2 teaspoons butter
Liberally butter an 8 X 8 baking dish.
In a large saucepan over medium-low heat, melt the butter. Once melted, add the brown sugar, corn syrup, and milk. Stir constantly until the mixture has reached 245 degrees. Remove from the heat and immediately add the vanilla. Pour into pan.
When the caramel has set, cut into 1 inch squares. Chill in the freezer or refrigerator until solid.
Melt the chocolate with 1 Tbs. butter in the microwave. Stir until combined.
Dip the firmed squares into the chocolate and chill on parchment paper.
