  • 2 C. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon (plus more for coating)
  • ½ tsp. nutmeg
  • ½ tsp. ground ginger
  • ¾ C. sugar (plus more for coating)
  • ¾ C. brown sugar
  • ½ C. vegetable oil
  • 3 eggs
  • ½ C. pumpkin puree
  • 1 ½ tsp. vanilla extract

Preheat oven to 350 degrees. In a large bowl, combine sugar and brown sugar. Add oil, eggs, pumpkin, and vanilla; beat well with an electric mixer until evenly combined. In a separate bowl, combine flour, baking powder, salt, cinnamon, nutmeg, and ginger. Pour into batter and mix well. Spoon batter into greased doughnut pans and bake for 15 minutes. In a large resealable bag, combine sugar and cinnamon for a coating. Toss warm doughnuts in sugar mix and set aside to cool completely.
