Simple Copycat Freshii Ranchero Grilled Breakfast Burrito

- 2 tsp. canola oil
- 1 C. black beans, rinsed
- 4 large eggs, beaten
- Salt to taste
- Pepper to taste
- 4 (10-inch) tortillas
- 1 avocado, seeded, skinned, sliced
- 1 C. shredded cheddar cheese
- 2 Tbs. chopped cilantro
- 1/2 C. salsa or pico de gallo
Heat canola oil in a large nonstick skillet over medium-high heat. Add black beans and cook for 3-4 minutes, remove from heat. Clean off skillet and return to stove over low heat. Spray with non-stick cooking spray.
Add eggs and cook, scrambling for 3-4 minutes. Season with salt and pepper. Assemble the burrito by laying out tortillas. Add eggs, beans, avocado slices, cheese, cilantro and salsa or pico de gallo evenly between the tortillas. Roll up while folding the sides in. Serve.
