Simple Creamy Potato and Bacon Quiche

- 1 sheet puff pastry, thawed and rolled out
- 2 lg. potatoes, sliced thinly and parboiled
- 4-6 slices bacon
- 6 med. eggs
- 1 C. shredded cheddar cheese
- 1/3 C. mayonnaise
- 1/3 C. whole milk
- 1 Tbs. fresh herbs, for garnish
Heat oven to 375 degrees, and liberally grease a crinkled pie plate with butter. Place the unrolled and thawed pastry on the pie plate. Whisk the remaining ingredients until well combined, and pour into the center of the pie crust.
Bake for about 40 minutes, or until you can insert a toothpick into the center of the quiche and it comes out clean.
