Simple Eggs Florentine Strata

- 1 loaf french baguette, cut into slices
- 6 eggs
- 2 C. milk
- 1 C. Monterey Jack cheese, shredded
- 1 C. mozzarella, shredded
- 16 oz. fresh spinach, sautéed
- 2 C. diced tomatoes
- Salt and pepper
- Cooking spray
In a large bowl combine eggs, milk, salt and pepper, whisk until well combined. Spray casserole dish and place a layer of bread slices on the bottom, then add about a cup and a half of spinach and spinach. Sprinkle a cup of cheese to cover the first layer. Repeat this once more. Pour egg wash over casserole and cover. Let refrigerate for at least four hours to overnight.
Preheat oven to 350º F. Before baking, sprinkle rest of cheese on top of casserole and place in the oven for 35-40 minutes. Or until eggs are cooked, and the bread and cheese is golden brown.
