  • 1 Box rotini pasta
  • 2 Tbsp olive oil
  • 1 Medium onion, sliced
  • 4 Garlic cloves, sliced
  • 1 Large eggplant, cubed
  • 1⁄4 tsp each salt and pepper
  • 1 Can diced roasted tomatoes
  • 1⁄2 Cup torn fresh basil leaves, plus more for garnish
  • 1⁄2 Cup ricotta cheese

Boil a large pot of water and cook pasta as explained on package.

Meanwhile, heat oil in large nonstick skillet over. Add onion and garlic and let is simmer before adding eggplant, salt and pepper and cook until eggplant starts to brown.

Add tomatoes, cover and continue to cook until eggplant is tender.

Top each serving with a bit of ricotta and garnish with more basil.
