Simple Honey Roasted Peanuts

- 3 1/4 cups raw cocktail peanuts
- 1/3 cup honey
- 2 tablespoons butter
- 1 teaspoon salt
Preheat oven to 325 degrees.
Prepare a non-stick baking sheet, or use a regular baking sheet and line it with aluminum foil. Spray or brush oil on the foil surface to prevent the peanuts from sticking. Alternately, you may use a silicon baking sheet liner.
Over low fire, mix honey, butter and 1 teaspoon salt. Stir the ingredients gently until the butter is melted and the mixture is smooth. Turn off the fire.
Pour the peanuts into the honey and butter mixture and stir to coat evenly. Once done, transfer the peanuts onto the baking sheet. Using a wooden spatula, spread the peanuts so they lay flat and even on the baking sheet.
Bake the honey and peanut mixture for about 20 minutes. The oven will bake the peanuts from the outside in, so the ones at the sides will turn brown more quickly. To prevent peanuts from burning, open the oven and stir the mixture every 4-5 minutes. Bake the mixture until golden brown. Once done, stir the peanut mix again and allow it to cool before serving.
