Italian Bean Salad is a healthy summer food and can be used as a side dish or snack with a main course. The name comes from Cannellini beans which, although comes from South America originally, have long been adopted by the Italians and has become a staple ingredient in many Italian preparations. The dish is low in calories, and the secret ingredient is really the dressing mix here. Make sure to add sugar to olive oil and vinegar for the dressing.

  • 1 15-oz. can cannellini beans, drained and rinsed
  • 1 15-oz. can butter beans, drained and rinsed
  • 1 sm. red onion, finely minced
  • 1 bunch scallions, sliced
  • 1 green pepper, finely diced
  • 2 cloves garlic, crushed
  • 2 Tbs. white vinegar
  • 6 Tbs. olive oil
  • 1 C. chopped parsley
  • 1/3 C. sugar

Mix the beans, the parsley, scallions, garlic, and pepper in a large bowl. Whisk the sugar, the vinegar, and the olive oil in a separate bowl to prepare the dressing. Add salt and pepper for seasoning. Once the dressing is prepared, mix the beans and the dressing, and refrigerate the mix for a few hours. This will allow the beans to absorb fully the flavors of the dressing.
