  • 1 C. basmati rice
  • 2 C. vegetable stock
  • 1 T. olive oil
  • 1 leek, diced
  • 2 large carrots, peeled and chopped
  • Salt and pepper to taste

Place rice in a large bowl, cover with water, and let soak for 30 minutes. Drain through a strainer and set aside. In a saucepan, bring your vegetable stock to a simmer. Meanwhile, heat oil in a large skillet and sauté leek and carrots until softened. Season generously with salt and pepper. Add in your rice, stir to combine, and cook for a few minutes. Pour in your heated vegetable stock and bring to a simmer. Cover and continue simmering for about 15 minutes until liquid has been completely absorbed. Remove from heat, let sit, covered, for 10 minutes. Fluff with a fork and serve.
