Simple Mint Sorbet
Serving Size / Yield
- 1 1/2 quarts water
- 1 1/2 quarts sugar
- 2 cups fresh mint with leaves and stems
- 1/2 cup fresh squeezed lime juice
- Zest of 2 limes
Combine water, sugar and mint in a heavy bottomed sauce pan over medium heat. Bring mixture to a boil and cook until sugar completely dissolves. Remove mixture from heat and cover to allow to steep for 15 minutes. Strain out mint leaves with a mesh strainer. Stir lime juice and zest into mint mixture and allow to refrigerate for several hours. Pour refrigerated mixture into ice cream maker and process according to instructions. Freeze for at least 4 hours before serving.
