  • 5 mushrooms, sliced
  • 1 red onion, thickly sliced
  • 2 teaspoon olive oil
  • 2 garlic cloves
  • 1/2 cup oregano leaves
  • 1 cup sour cream
  • 1/3 cup extra virgin olive oil
  • 8 slices sourdough bread
  • 1/2 cup lime juice
  • Salt and pepper to taste
  • Rocket leaves, to serve

In a bowl, place the mushrooms with onion. Whisk 1 teaspoon of olive oil with garlic in another bowl and add oregano, salt and pepper. Add this mixture to the mushrooms and onions and set aside for about 10 minutes. Now preheat your barbecue or chargrill pan to high heat. In a small bowl, whisk the extra virgin olive oil with lime juice. Brush the breads on both sides with the remaining oil and cook for a minute until they are slightly charred. Cook the mushrooms and onion for a few minutes. To serve, divide the rocket leaves among plates. Spread the sour cream on tastes breads and top them with mushrooms and onions. Sprinkle some oregano.
