  • 4 boneless pork chops
  • 2 T. olive oil
  • 6 T. all-purpose flour
  • 2 shallots, diced
  • 2 cloves garlic, minced
  • 8 oz. sliced mushrooms
  • 2 tsp. thyme
  • 1 C. chicken broth
  • ¼ C. Marsala wine
  • Salt and pepper to taste

Dredge pork chops in 4 tablespoons of flour. In a skillet, heat oil and cook pork chops until browned; remove and set aside. In the skillet, sauté shallots, garlic, and mushrooms until tender. Stir in thyme and remaining flour and cook for a minute or two. Pour in chicken broth, wine, salt, and pepper; whisk mixture, bring to a boil, reduce heat, and simmer for a few minutes while sauce thickens. Add pork chops into sauce and cook until heated through.
