  • 1 3/4 lb. pork roast
  • 1/3 C. olive oil
  • 1 T. rosemary
  • 1 T. parsley
  • 1 T. thyme
  • 2 cloves garlic, minced
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 5 T. butter, sliced
  • 1 onion, chopped
  • 2 lb. potatoes, peeled and sliced

Preheat your oven to 375°F. In a small bowl, combine olive oil, rosemary, parsley, and thyme. Place pork in a large roasting pan and brush with most of the olive oil mixture. Arrange potatoes around the roast and drizzle with remaining olive oil mixture. Rub meat with garlic. Season entire roasting dish with salt and pepper. Place pats of butter on top of potatoes and add chopped onion to pan. Roast for 40 minutes, stirring potatoes halfway. Transfer to the broiler for five minutes. Serve immediately.
