  • 1 lb. small, tender okra
  • 1 medium onion, chopped
  • 1 tsp. ginger, minced
  • 2 cloves garlic, minced
  • 1/2 tsp. cumin
  • 1/2 tsp. turmeric
  • 1/2 tsp. garam masala
  • 1.2 tsp. red pepper flakes
  • 1 tsp. sea salt, optional

Heat the oven to 450 degrees and trim the stems of the okra. Put the okra in a single layer on a baking sheet and bake for 15 to 20 minutes, stirring halfway through. The okra is done when it is beginning to brown but isn’t burned.

In a skillet over medium-high heat, add the chopped onion. Cook until the onion begins to soften, and then add the ginger, garlic, and cumin. Cook for another minutes before adding the turmeric and garam masala. Cook for another minute. Add 1 Tbs. water if the spices start to stick. Add the roasted okra and salt. Stir well and cook for another 1 to 2 minutes.
