  • 1 onion, sliced
  • 4 cloves garlic, smashed
  • 1 leek, cleaned and chopped
  • 1 red pepper, sliced
  • 1 tsp. dried thyme
  • 1 C. red wine
  • 1/2 C. soy sauce
  • 1 T. sugar
  • 1/4 tsp. freshly ground black pepper
  • 3 1/2 lb. short ribs
  • 3 potatoes, peeled and quartered

In a large roasting pan, mix together all ingredients except the ribs and potatoes. Add the ribs and coat with the pan mixture. Cover and refrigerate for six hours. Remove 30 minutes prior to baking. Preheat your oven to 400°F. Bake the ribs for three hours, reducing oven temperature to 350°F after the first hour. Turn the ribs over and add the potatoes in the last 40 minutes of cooking. Let stand for 10 minutes before serving.
