Simple Salmon Appetizer on a Cracker

- 24 tea crackers
- 1 lb. smoked salmon (gravlax may also be used), cut into 2 inch slices
- 8-oz. creme fraiche (or sour cream)
- 1 lg. sprig dill, chopped into cracker-length sections
- 1 lemon, wedged.
About 30 minutes to an hour before the gathering or serving, lay the crackers on a serving tray and place a piece of salmon on each cracker. Spoon a teaspoon of creme fraiche or sour cream onto the salmon and top with a piece of dill. Just prior to serving, squeeze about half of the lemon wedges on top of the crackers. Serve the remaining wedges along the tray.
