Simple Seared Scallops with Carrots and Zucchini
Serving Size / Yield
- 1 lb Fresh Scallops
- 1 Tbs Margarine mixed with lemon juice
- 1 C. Carrots, peeled and shredded
- 1 C. Zucchini
- Salt and pepper
Heat oven to 350 degrees F. Spray stove top pan. Melt margarine and lemon juice on pan, med-high heat. Add in scallops to pan, add salt and pepper. Sear until cooked. Slice zucchini and place on cooking sheet. Allow to bake in the oven for 15 minutes or until crispy. Served prawns atop zucchini with shredded carrots on top.
