  • 1 lb. shrimp, cooked, peeled, and deveined
  • Salt and pepper, to taste
  • 1/2 lb. fresh mushrooms, sliced
  • 7 Tbs. butter, divided
  • 1 Tbs. flour
  • 1 C. sour cream
  • 1 tsp. soy sauce
  • 1/4 C. Parmesan cheese, grated
  • 1 tsp. paprika

Heat the oven to 400 degrees. In a greased, shallow baking dish, lay the shrimp in a single layer and season with salt and pepper. In a skillet, sauté the mushrooms in 3 Tbs. butter until the mushrooms are slightly browned. Transfer the mushrooms to a bowl and toss in flour. Soften 4 Tbs. butter and stir the sour cream, softened butter, soy sauce, salt, and pepper to the mushrooms. Pour the mushroom sauce over the shrimp. Sprinkle with Parmesan cheese and paprika. Bake for 10 to 12 minutes, or until the cheese is bubbly.
