  • 2 C. cooked shrimp
  • 1 ½ C. cooked udon noodles
  • 2 T. rice vinegar
  • 2 T. soy sauce
  • 1 T. honey
  • 1 tsp. fish sauce
  • ½ tsp. cornstarch
  • 4 cloves garlic, minced
  • 1 T. olive oil
  • ¼ C. cashews
  • 1 C. mushrooms, sliced
  • 1 red bell pepper, sliced

In a large skillet, heat olive oil and briefly sauté garlic, cashews, mushrooms, and bell pepper to soften (about 5 minutes). In a bowl, whisk together rice vinegar, soy sauce, honey, fish sauce, and cornstarch. Add noodles and shrimp into skillet with vegetables and pour in sauce. Heat briefly and toss well.
