  • 1 cup minced onion
  • 2 tablespoons extra virgin olive oil
  • 4 cups vegetable broth
  • 1 15 ounce can tomato puree
  • 2 cups rotini
  • Salt and pepper
  • 1/2 cup grated parmesan
  • 1 lb mini shell pasta
  • Parsley
