These simple rollups are great for a party or a festive brunch! Fill these mini omelet bites with bacon, ham, your favorite cheese, and practically anything you can think of!

  • 4 oz. cream cheese, softened
  • ¾ C. milk
  • 2 T. flour
  • Salt and pepper to taste
  • 12 eggs
  • 1 C. spinach, finely chopped
  • 2 ½ C. cheddar cheese

Preheat oven to 375 degrees. In a bowl, beat together cream cheese, milk, flour, salt, and pepper until smooth. In a separate bowl, whisk eggs; add to cream cheese mixture and stir until evenly combined. Line the bottom and side of a baking pan with parchment paper (grease paper with cooking spray as well). Pour mixture into your pan and bake for 30 to 40 minutes until eggs are firm and puffed. Remove egg on parchment paper from pan, sprinkle on cheese and any other preferred filling, and roll up, peeling away paper as you go. Slice into 12 to 16 rollups and serve.
