  • 10 graham crackers, crushed
  • 4 T. butter, melted
  • 1/8 C. brown sugar
  • 8 oz. cream cheese, room temperature
  • 14 oz. sweetened condensed milk
  • 1/4 C. lemon juice
  • 1 C. fresh strawberries, chopped
  • 3/4 C. water
  • 1/4 C. sugar
  • 1 T. cornstarch
  • 1/2 pkg. powdered strawberry drink mix (such as Kool-Aid)
  • 2 mason jars

In a small bowl, combine graham cracker crumbs with melted butter and brown sugar. Press mixture into the bottom of both mason jars. In another bowl, beat together cream cheese, condensed milk, and lemon juice. Once smooth, distribute filling into the jars. Cover and refrigerate for one hour. In a small saucepan, combine water, sugar, and cornstarch. Bring to a boil and stir in strawberries. Reduce heat and let simmer for five minutes. Remove from heat and add powdered drink mix. Bring to room temperature before spooning on top of chilled cheesecakes.
