Simple Strawberry Muffins Recipe

Made from scratch, these moist muffins have chunks of strawberries in them for fruit in every bite.

  • 1/2 C. butter at room temperature
  • 1/2 C. butter flavored shortening
  • 1 C. sugar
  • 2 eggs
  • 1 C. strawberry yogurt
  • 1 tsp vanilla extract
  • 2 C. all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 C. fresh strawberries, cut in small piece

Preheat oven to 350 degrees. Grease and flour 24 muffin cups or use paper cupcake liners. In large mixing bowl, cream together butter, shortening, and sugar until well blended. Add eggs, yogurt, and vanilla and beat well about 2 minutes. Stir in flour baking soda, and salt and mix until flour is completely blended. Fold in strawberries. Pour in muffin cups until about half full. Bake for 20 minutes or until center springs back when touched.
